Ubin, named after the Chorotega word for “school,” is the vision of a Montezuma local whose journey began in the small kitchens of his hometown. Following his passion for cooking, Keilor Sánchez grew from preparing dishes in local eateries to mastering haute cuisine in renowned restaurants in Paris, just steps from the Eiffel Tower.
Guided by his roots, Keilor returned to Costa Rica, refining his craft in some of San José’s finest kitchens before coming home once again to Montezuma. There, he opened Ubin, his signature restaurant—a place where local ingredients, cultural heritage, and international culinary experience come together to create truly meaningful food.
Ubin offers a curated selection of contemporary dishes that highlight the richness of coastal and local ingredients. Each plate is crafted to deliver a memorable experience in every bite—from fresh seafood and premium meat cuts to refined Costa Rican classics and thoughtfully created vegan and vegetarian options.
